Vanilla Stout In Primary fermenter: 3.5 Gallons filtered and bottled water mix Lobster pot: 1.5 Gallons (6 quartz) filtered and bottled water mix Had 2X 3.3lbs of malt extract, needed 6lbs so poured all in but didn't try to get the remnants out of each container so a lot was left behind. Initial water temperature 57F date: Action: Specific Gravity: Temp: 12/30/2012 Brewed 1.050 9:26PM 215F 9:28PM 200F 9:29PM 175F 9:30PM 150F 9:32PM 125F 9:35PM 100F 9:44PM ~70F Pitched yeast 64F 12/31/2012 Bubbling 70F 01/06/2013 Cutup two vanilla beans and soaked in a covered glass of vodka (just enough to cover them in a short glass). 01/08/2013 Transfered to secondary and added vanilla, including the beans. Smelled like beer and very nice color. 01/22/2013 Bottled (3 big 36 small). Small taste, very malty, vanilla is more of an aftertaste. Could use more. 02/01/2013 Tasted one. Nicely carbonated, great color, nice vanialla taste (not too strong). Could probably use a little more aging to be more complex. Maltiness was actually good. 03/25/2013 Only a few left, but still very good. 08/11/2013 Found one big bottle was forgotten in the closet. Sadly it wasn't very good.
